Learning how certain foods react when they are cooked or stored is important to healthy eating. We want our food to taste great but did you know that some of the ways we cook our food actually takes the nutrients out of it? For instance, boiling vegetables takes some of the vitamins and minerals out of them. Try instead to steam your veggies in a steamer. Also one interesting thing I learned is to set aside garlic for 10 minutes after you chop it. It allows the health benefits of the alliicin to activate. It also enhances the flavor too.
